Ingredients: 1 lb. ground beef, browned and drained 1 (15 oz.) can pinto beans, drained 1 (10 oz.) can enchilada sauce 1 (8 oz.) can tomato sauce 1˝ c. shredded cheddar cheese 1 T. instant minced onion 1 (6 oz.) pkg. Fritos corn chips 1 c. sour cream for topping

Directions:Take sour cream, ˝ cup of the shredded cheese and 1 cup of the Fritos out and set aside for topping. Crush the remaining Fritos and add the rest of the ingredients; put in a 1˝ qt .casserole dish. Bake at 375° for 30 minutes. Top with the sour cream and then remaining ˝ cup of cheese. Surround with reserved chips and bake 2 to 3 minutes more. Serve with cornbread and a salad. |

When I was fifteen I asked my dad to teach me to drive and he said, “NO.” I got the message loud and clear. The next Saturday I rode my bike to town and noticed a lot of cars in the little parking lot. It came to me out of the “BLUE”— I’ll just teach myself to drive. I rode my bike around each car until I found one with the keys in it. (People did that back then.) I chose only the ones with automatic. I didn’t want a jumping car to draw attention to me. After a few weekends of this, I was doing pretty good so I decided to leave well enough alone.
