Marinade: 1 Large Onion, 2 Carrots, 6-10 cloves of garlic, 4 stalks of celery, 3 tablespoons of Cumin, 1/8 cup of coarse salt
A dozen crusty sandwich buns
Mayonnaise
Lettuce
Barbecue sauce

The marinade is best processed in a food processor. Slather the pork loin with the marinade and refrigerate overnight. Put the pork loin in a slow cooker for 6 hours with enough broth to keep it from sticking to the bottom of the pan.. The meat should be falling apart after that amount of cooking. Pull the pork and mix with your favorite barbecue sauce. Make sandwiches with a generous amount of pulled pork, mayonnaise, and lettuce.

We usually cook the pork loin with the marinade left on. This adds to the roux left in the pot and later can be thickened with barbecue sauce to maximize the flavor of this hearty sandwich. Serve with Potato Salad, Cole Slaw and Pickles. A favorite micro-brew will add to this great picnic fare.
