1/4 c. butter
1/4 c. grated parmesan cheese
2/3 c. crackers, crushed
1/2 t. basil
1/2 t. oregano
1/2 t. salt
1/2 t. garlic powder
2 lbs. walleye or roughy (or any fish)
1 T. white wine
1/4 lb. mushrooms
1 T. lemon juice
1/4 c. slivered almonds

Directions:
Directions:
Melt butter. Dip fish in butter then in cracker, cheese, basil, oregano, salt and garlic powder mixture. Arrange in 9 x 13 pan. Sprinkle w/ lemon and wine. Sprinkle almonds and mushrooms on top. Bake uncovered at 350º for 25 minutes. Can be made the day before, just cover and refrigerate.
*I make extra crumbs and put them on top of the fish in the pan and drizzle with extra butter and extra wine.
