8 to 10 medium potatoes
8 oz. cream cheese
1 c. sour cream
1 tsp. salt
Chives, chopped (optional)
1/4 tsp. pepper
2 T. butter

Directions:
Directions:
Peel potatoes and cut into fourths. Place into a sauce pan and cover with water. Cook until potatoes are fork tender. Drain. Beat the cream cheese and sour cream at medium speed with mixer until well blended. Add hot potatoes gradually, beating constantly until light and fluffy. If mix is too stiff, add a tablespoon of milk at a time until desired consistency. Season with salt, pepper, and chives. Place in a 2-quart casserole. Dot with butter. Sprinkle with paprika if desired.

This can be refrigerated several days before using. Put in a 350º oven and bake 1 hour.
