1-2 pounds ground beef
Flour tortillas, same width as baking pan
Shredded cheddar cheese
1/2 to1 onion chopped
1/2 to1 tomato chopped
Salsa
Optional: Red, green, yellow, or jalapeño peppers, black beans, sour cream, avocado, French salad dressing

Brown ground beef, drain. Add onion. Add peppers, chopped, if desired. While meat, onions, and peppers are heating, Rub the bottom and sides of a baking dish with olive oil. Lightly coat a skillet with olive oil and heat to medium One by one, place tortillas into skillet, lightly brown them, and while still flexible set into baking dish, add meat mixture, some salsa, shredded cheese and beans, and roll up. Pinch the ends and place them side by side in the baking pan until no more will fit. Lightly brush tops with olive oil and sprinkle with more shredded cheese. Bake for 45-50 minutes at 350º or until cheese topping is golden brown and tortillas are light and crispy. Serve on a bed of shredded or chopped lettuce with sour cream, avocado, and additional salsa. Drizzle French salad dressing on the lettuce.
