3 eggs
1 cup sugar
2 tsp. vanilla
2 1/2 cups flour
1 tsp. baking soda
1 tsp. salt
1 cup vegetable oil
2 cups zucchini, grated and drained
1 tsp. baking powder
3 tsp. cinnamon
1 cup nuts, chopped

Directions:
Directions:
Grease and flour two 5 x 9 inch loaf pans. Mix eggs, oil, sugar, zucchini and vanilla. Sift dry ingredients together. Combine zucchini mixture with dry ingredients. Stir in nuts. Spoon the batter evenly into the two prepared loaf pans. Bake at 350 for 1 hour. Cool 10 minutes before removing from pan.
