3 pounds potatoes, peeled and cubed
1 large onion, chopped
1 stick butter
Skim milk
Salt and Pepper to taste

Cover peeled cubed potatoes and chopped onions with water in a large pan. Boil gently until potatoes are tender. Drain mixture. Cover with skim milk. Add 1 stick butter or margarine. Heat until hot. Mash to lumpy consistency with a potato masher. Add salt and pepper to taste.

This has been the "go to" recipe throughout our 30+ years of marriage whenever we have been trying to save money. It was taught to us by my maternal grandmother, Grandma Lydia Pritzkau. The recipe can be changed into clam or shrimp chowder by adding the desired cooked seafood and/or fried bacon bits.
