3 1/2 lbs. center cut salmon - fresh, cleaned and scaled but skin left on
Large bunch fresh dill
1/4 cup kosher salt
1/4 cup sugar
2 tbsp peppercorns, crushed

Directions:
Directions:
Place 1/2 fish skin side down in glass, enamel or stainless dish. Wash and dry dill and place on fish. Mix sugar, salt and pepper and sprinkle over dill.

Top with other half of fish skin side up. Cover with foil. Put a dish or platter on top and then something to weight it down (cans of food like olives or others).

Refrigerate for 3 to 6 days (3 days with 3.5 lbs probably enough - but five or 6 days with larger quantities - like 8 to 10 pounds).

Turn every 12 hours and baste with liquid that comes out of fish. (I put on thin disposable rubber gloves to do this or your hands smell like fish forever).

Remove and scrape off seasoning and pat dry with paper towels. Slice using sharp knife on a diagonal. Can slice on platters and keep for 24 hours.

Serve accompanied by lemon, capers or mustard dill sauce.
