2-3 garlic cloves coarsely chopped, plus 2 whole cloves
12 slices of baguette (1/4 inch thick)
1/4 cup olive oil, chilled, plus salt and pepper
2 oil packed anchovies chopped (optional, but flavorful)
1 large egg yolk
1/4-1/2 cup finely grated Parmigiano-Reggiano cheese, plus shavings
1 heaping tablespoon of fresh lemon juice
1 teaspoon Dijon mustard
2 dashes Worcestershire sauce
2 dashes Tabasco hot sauce
6 heads baby romaine lettuce, halved or 6 cups chopped

Preheat oven to 350. Using the whole garlic cloves, rub both sides of each baguette slice. Brush with 1 tablespoon oil and season with salt and pepper. Bake until golden brown, about 12 minutes. Cool and break into croutons, any size, your choice.
In blender or small processor, puree' garlic, anchovy,yolk,grated cheese, lemon juice, mustard Worcestershire, Tabasco, salt and pepper. Pulse in olive oil. Toss lettuce and croutons with 1/4 cup dressing. Season with pepper and top with cheese shavings. Enjoy!

A little dressing goes a long way. Chill the Olive Oil just a bit so it emulsifies with the other ingredients. Anchovies can be omitted but truly they add just salt flavor not fish. A must in the salad.
