Crepes
3 beaten eggs
1c milk
1T oil
1c flour
1/2t salt

1. Combine eggs, milk and oil.
2. Add flour and salt.
3. Pour 2T batter into greased 6” skillet on medium-low heat. (Gently swirl the pan to make a circle on the bottom. Cook for approximately 1-2 minutes or until crepe no longer appears gooey.)
4. Invert onto toweling.

Sausage Filling
1lb sausage browned
¼ c onion
½ c shredded processed cheese
8oz cream cheese

1. Mix the above ingredients.
2. Spoon 2T mixture into center of crepe.
3. Roll crepe and place in a 9X13” pan.
4. Cover, chill or freeze.
5. Bake covered in 375 for 40 min.

Crème Topping
½ c sour cream
¼ c butter

1. Mix and spoon over crepes.
2. Bake uncovered for 5-10 minutes more.

Recommendations:
Serve with Large Lemon Jello and Green Bean Casserole.
Prepare filling first. While crepes are cooking, add filling to cooled crepes. These are also very good as left-overs.
