3 c. shredded potatoes (or frozen hash browns)
1 lb. sausage
1 med. onion, chopped
1 c. grated cheese
8 eggs
2 c. milk
1 tsp. dry mustard
1/2 tsp. salt
Dash pepper

Directions:
Directions:
Brown sausage with onion, then drain. Butter 9"x13" casserole pan. Layer in potatoes (sprinkle with a little extra salt), sausage, and cheese. (Cheese will rise to top while baking.) Mix all other ingredients and pour on top.

Bake in 350 oven for 40 to 45 minutes or until lightly brown.
