40 Vanilla Wafers,crushed
1 c. cream style cottage cheese
6 Tbsp butter melted
2 8oz light cream cheese
1/4 cup blackberry,cherry brandy or orange juice
3/4 c. sugar
2 Tbsp flour
3 eggs
2 tsp vanilla
1 1/2 berries
1 Tbsp brandy (I use any fruit juice)
1 Tbsp sugar

Directions:

Make crust in 8” (9) spring form pan.
Bake for 5 minutes
Mix cream cheese,sugar,flour and vanilla.
Beat medium speed til combined.
Set side.
Put cottage cheese in blender or food processor til smooth.
Stir into cheese mixture.
Add juice, eggs all at once.
Beat low speed til combined-Do not overbeat.

Pour 1/2 into crust.
Spread 1 cup fruit on top.
Add rest batter, then 1/2 cup fruit.

Bake 375º for 40-45 min.
Place on a foil lined cookie sheet in case it leaks.
Cool 15 min.

Topping-Combine 2 cups fruit, 1 Tbsp juice and sugar. Cover and chill at least 2 hours.

We like this best without the topping. I sometimes make the topping and serve it on the side

A favorite desert!
Frozen blueberries work just as well as fresh.
Cook on a foil lined cookie sheet because it leaks. A wonderful low fat moist cheesecake.
