1 c. butter softened
1 c. firmly packed brown sugar
½ c. sugar
2 eggs
1 t. vanilla extract
1 ½ c. flour
1 t. baking soda
1 t. cinnamon
½ t. salt
3 c. oats
1 c. raisins

Directions:
Directions:
Cream butter and sugar.
Add eggs, one at a time and vanilla.
Combine flour, baking soda, cinnamon and salt. Add to butter/egg mixture.
Stir in 3 c. oats and raisins.
Drop dough onto greased cookie sheet.
Bake 350 degrees for 10 – 12 minutes.
Cool for 1 minute, remove from cookie sheet.
Cool and store in airtight container.

One of Ed's favorite cookies! He loves to eat them for breakfast with coffee.

For a very soft,lowfat cookie,substitute 1/2 c applesauce for 1/2 c butter.
