1 – 7 oz. jar roasted red peppers
2 c. chopped cooked chicken
1 8 oz. cream cheese, softened
1 (0.4 oz.) envelope Ranch-style dressing mix
¼ c. chopped ripe olives
½ small onion, diced
1 (4.5 oz) can chopped green chiles, drained
2 Tbsp. chopped cilantro
½ t. pepper
¼ c. pine nuts
8 – 6” flour tortillas

Directions:
Directions:
Drain roasted peppers well, pressing between layers of paper towels; chop.
Stir together peppers, chicken, and next 7 ingredients.
Cover and chill for at least 2 hours.
Stir pine nuts into chicken mixture.
Spoon evenly over tortillas, and roll up.
Wrap in saran wrap.
When ready to serve, cut into 5 or more slices.
