Portabello Mushrooms (8-12 large mushrooms of any kind), 1 large chopped onion, 2 clove garlic, 1/2 tsp salt, pepper, 4 oz bleu cheese, 2 cups swiss cheese, 2 cups Parmesan cheese, heavy cream, 8 cups thinly sliced and peeled potatoes,

Chop mushrooms and onions. Saute portabella in butter, garlic, salt and pepper. Slice potatoes, place in a big bowl. Chop garlic. Shred the cheese mix it up and let set. Mix in the heavy cream. Layer the pot, add mushrooms and potatoes. Oil a casserole dish and put a layer of the potatoes on the bottom. Arrange onions and mushrooms. Drizzle cheese mixture on top. Continue layering like this until all ingredients are used up. bake at 375 for about 1 hour.
