2 (4 oz) skinned, boned chicken breast
1 Tbsp seasoned breadcrumbs
vegetable cooking spray
1/2 tsp olive oil
1 cup fresh sliced mushrooms
1/2 cup + 3 tsp chicken broth
8 strips sweet red peppers
2 tsp lemon juice
1/4 tsp Italian seasoning
1/8 tsp salt
1/8 tsp dried crushed red pepper
1 clove garlic, minced
1 tsp cornstarch

Directions:

Flatten chicken breast to 1/4 inch thickness. Dredge in bread crumbs. Coat a nonstick skillet with cooking spray, add oil. Heat over medium heat. Add chicken, cook 3 minutes. Add mushrooms, 1 Tbsp chicken broth and pepper strips to skillet. Saute 3 minutes. Add 1/2 cup chicken broth, lemon juice and next 4 ingredients; bring to a boil. Cover, reduce heat and simmer for 10 minutes. Combine remaining 2 Tbsp chicken broth, corn starch, stir well and add to skillet. Bring to a boil stirring constantly for 1 minute( or until desired thickness). Serve sauce over chicken.
