6 sweet peppers, green or red, cut into pieces,1 quart diced onions, 1 quart diced celery, coarse stalks and leaves, 1 quart water or tomato juice, 4 to 6 quarts ripe tomatoes, peeled, quartered, 3 tbsp salt, 2 tbsp sugar, 1/2 tsp pepper
Put peppers, onions, celery water in deep kettle. Cook 20 minutes. Add remaining ingredients. Bring to a boil and put into hot jars. Process in boiling water bath - 40 minutes for quarts - 30 minutes for pints
