10 c. zucchini or 6 large zucchini shredded
4 med. onions
2 med. green peppers
1/4 c. salt 2 tsp. tumeric
3 c. sugar
2 c. vinegar
2 tsp. celery seed
1/2 tsp. black pepper
1 tsp.nutmeg
1 tsp.dry mustard
1/2 lb carrots shredded

Shred zucchini, onions, peppers,in a food processor. place in a large bowl or dish pan, add salt & cover with cold water. Let stand 1 hr.Rinse by running water over the mixture. Drain & mash out excess water In a pan bring turmeric,sugar, vinegar & celery seed to a rolling boil .then add squash mixture. Bring to a boil and cook 30-40 min. more then pack in clean hot jars .& seal lids. Turn upside down to seal.
