1 head iceberg lettuce
1 lb. romaine lettuce
1 red onion, thinly sliced
1 can artichoke hearts, drained
4 oz. jar pimento
1 c. shredded Parmesan cheese

Dressing:
1/4 c. olive oil
1/4 c. red wine vinegar

Directions:
Rinse lettuce and spin dry in salad spinner or drain completely if you don't have a spinner. Break lettuce into small pieces. Thinly slice the red onion. Cut artichoke hearts in half. Put all these items into a large salad bowl.

In separate bowl - mix olive oil and vinegar. Just before serving pour vinegar and oil mixture over salad; sprinkle with pimento and Parmesan and toss.
