2 Large potatoes - boil potatoes in skin - peel and mash when done. Add salt to taste
- 1 egg beaten
- 1 /2 C flour (approximate) just enough flour to make dough

Directions:
Directions:
Mix ingredients together and knead dough until smooth and no longer sticky, using enough flour just to make a nice dough.
Divide dough and roll into "ropes" 3/4 inch thick. Cut into 1 inch pieces and drop into boiling water. Gnocchi will rise to surface when done. Remove from water, drain and top with your favorite pasta sauce.
