1/4 lb. prosciutto, chopped
1 lb. penne pasta
2 - 8 oz. cans diced tomatoes
1 T. olive oil
2 cloves garlic, chopped
1 T. bay leaves, crushed
1 T. parsley flakes
1 tsp. crushed red pepper
1/4 c. Vodka
1 c. heavy cream
1/2 c. Parmesan cheese

In a large skillet sauté garlic in olive oil.
Add diced tomatoes, prosciutto, parsley, bay leaves, red pepper and vodka.
Simmer for 10 minutes over medium heat.
In separate pan cook the penne until al dente (still firm but not hard) and drain.
Add heavy cream to the sauce and cook for 2 minutes in low heat.
Add penne to the sauce.
Gradually add the Parmesan cheese, stirring constantly.
Simmer 5 minutes.
