1 cup sugar, 2 cups sifted flour plus 1 tbsp, 3/4 cup margarine, 1 1/3 cup coconut, 1 1/2 cup crushed walnuts, 1 egg, 1 tsp vanilla, 1/4 tsp salt, 1 tsp baking powder, 1 jar (12 oz) apricot preserves

Directions:

Cream sugar and margarine. Add egg and vanilla. Sift dry ingredients, mix together, add coconut and walnuts. Use 9 inch pan, spread mixture. Add jam. Cover with the rest of the mixture. Bake for 35 minutes at 350 - Cool. Cut into squares.
