1/2 cup shortening ( or applesauce)
2 cups flour
1 cup sugar
1 cup mashed bananas
3/4 cup oats
3/4 cups chopped pecans (or your choice of nut)
2 eggs
1 cup frozen blueberries

Directions:
Directions:
Preheat oven to 350º. Grease and flour a 9 x 5 in. loaf pan. Defrost blueberries in microwave.

Mix flour, sugar, shortening (or applesauce), in a bowl. Add the bananas, oats, pecans, and blueberries. Mix gently. Batter may be slightly runny. Pour batter into loaf pan.

Cook for 50 - 60 minutes or until wooden toothpick comes out clean.

This recipe works better when using 2 small loaf pans instead of 1 large loaf pan.

Instead of coating the loaf pan with flour, spray with cooking spray. Mix sugar and cinnamon together and sprinkle sides and bottom of pan. Sprinkle top of batter as well.
