Dressing:

Blend together and refrigerate:
1/4 cup olive oil
4 tsp. sugar
1 tsp. salt
1 Tbsp. soy sauce
4 tsp. rice vinegar or apple cider vinegar

Salad:
1 head lettuce, shredded
4 chicken breasts, cooked and chunked
1 cup diced celery
3 green onions diced
1 can sliced water chestnuts
1 can mandarin oranges
1/2 cup salted cashews (if desired)
Crispy rice noodles
Mix together

Pour dressing on top, and serve right away or the salad will be soggy.
