1 lb hamburger
2 Tbsp olive oil
2 large onion
1 Tbsp minced garlic (about 6 cloves)
1 jar (8 0z) of artichoke hearts, quartered, with liquid
8 fresh tomatoes, diced (or 2 15 oz cans diced and drained)
25 fresh basil leaves, chopped
10-12 pitted Greek or Spanish olives, chopped
1/2 cup red wine
1 package (16 oz) ziti or other cut pasta
Grated Parmesan cheese for serving

Directions:

brown the hamburger. In a large skillet, heat oil over medium heat. Add the onions and garlic and saute them until the onions start to brown, about 5 minutes. Add hamburger.
Add the artichoke hearts, tomatoes, basil, olives, and wine. Simmer the sauce gently for at least 15 minutes and up to 45 minutes.
Meanwhile, cook the pasta according to the package instructions and drain. Toss the pasta with the sauce and serve with the grated Parmesan cheese.

This recipe could be vegetarian or you could use chicken rather than burger. Add anything in your veggie drawer: peppers, zucchini, eggplant, mushrooms. Serve with bread and sliced peaches!
