4 Tbsp butter
1/4 cup Dijon mustard
1/2 cup honey
1 tsp curry powder
1 whole chicken cut up or 8-10 chicken pieces of your choice

Preheat oven to 350º. In a small saucepan, melt the butter over medium low heat. Add the mustard, honey and curry powder and continue cooking and stirring until sauce is well mixed, about 2 minutes. Arrange the chicken pieces in a large baking pan. Pour the sauce over the chicken (at this point you can refrigerate the chicken for up to 24 hours or bake it right away.
Bake for 50 minutes (if at room temp). Halfway through, turn the chicken over and baste it with sauce. For browner tops, put the chicken under the broiler for the final 5 minutes of cooking.

I prepare this the morning of or the night before so its ready to pop in the oven when I get home from work. Serve with couscous and lemon pepper asparagus.
Another variation is to marinate in 1/ cup soy and 1/2 cup honey.
