Baguette - 2 loaves may be needed - sliced in 1/2 inch slices

Directions:
Finely dice tomatoes, shallots, red onion, celery and basil. (often use just regular onion)
Mince garlic.
Mix first 10 ingredients and let set in fridge for at least 2 hours, but not overnight.

To serve (this is definitely finger food):
Place tomato mixture in a bowl and cheese alongside on a plate with whole, cleaned basil leaves and bread slices.
Take a piece of bread, spread with cheese, place a whole basil leaf on top and top with a tablespoon of tomato mixture.

Given to Ginger Paris by Lynn (Meadows) Shapiro for teacher appreciation, who says that this says “I love you” with a “fresh from the garden flavor”! This is Ginger's favorite appetizer to serve when friends visit.
