½ cup sugar
1/8 teaspoon salt
2 tablespoons cornstarch
2 c milk - I use 1%
1 egg
1 Tbsp butter
1 tsp. vanilla

Directions:
Directions:
Stir with whisk to combine-
½ cup sugar
1/8 teaspoon salt
2 tablespoons cornstarch in 4 cup or larger glass bowl
Gradually add 2 cups milk to mixture above.

Cook on high for 5 to 7 minutes, stirring twice, until mixture is smooth and thick. Be careful, - will overflow if not stirred and watched carefully!
Add small amount of the hot milk mixture to one beaten egg, stirring constantly.
Add warmed egg mixture to hot pudding, mixing well.
Cook on power 7 for 2 minutes, stirring twice until thickened.
Add 1 Tablespoon of butter and 1 teaspoon of vanilla.

This pudding can be served warm or chilled in individual custard cups, or in banana pudding. It tends to separate after a few days, but it never lasts that long.
