6-7 cups all-purpose flour
1 1/2 tsp. salt
6 eggs, lightly beaten
1 cup water
1 tbsp. oil (if boiling for buttered noodles)

Directions:
Directions:
Combine 6 cups flour and salt. Make a well in center. Beat eggs and water; pour into well. Stir together, forming a dough. Turn dough onto a floured surface and knead 8-10 times. (If dough is sticky, add a little more flour).

Divide dough into 8 portions or amount you desire. Roll each portion out (thickness you desire) and let stand, uncovered, for 10 minutes.

Cut into desired width and let dry in a single layer for an hour before cooking.

This is the recipe I use when making chicken and noodles. If my broth is ready and boiling, I seldom let them dry and just add them immediately.

If tossing them with just butter, add the oil to the boiling water.
