1 lb green beans, stemmed
3 garlic cloves, smashed
1/4 cup extra virgin olive oil
salt and pepper
3 anchovy fillets (optional)
2-4 tsp fresh lemon juice

Directions:
Directions:
Pre-heat oven to 400. In a large baking dish, toss the green beans with the garlic and olive oil and season with salt and pepper. Spread the beans and seasoning in a single layer and roast for about 15 minutes, tossing occasionally, until tender and lightly browned.

Transfer beans to a bowl. Add the lemon juice and anchovies and toss well to coat. Serve warm or at room temperature.

I have never made these with the anchovies. They are great without them, though.
