1 cup Bulgar wheat (2:1 ratio with water; according to package directions)
¼ cup feta
½ pepper
½ tomato
½ lemon – juice
¼ cup good olive oil
lots of fresh course cracked black pepper
salt to taste

Directions:
Directions:
Soak bulgar wheat until liquid is clear
In a saucepan, bring water to boil, add bulgar wheat, then bring back to boil. Turn off burner and let sit for 30 minutes (add more liquid-more boil as necessary). Let cool.
Add remaining ingredients in a bowl. Add cooled bulgar wheat and serve.
