1 mango
Rice Vinegar (Nashiki brand) – or some other acid (citrus)
Toasted sesame oil
Salt and white pepper to taste
Cayenne pepper (optional)

Directions:
Cut mango at stem and feel the seed, cutting down the side. Do each half that way then get the meat on each side of the seeds. Then peel.
Add all ingredients in blender and blend until smooth.
For salad dressing, add more vinegar.

Serve as a sauce for seafood (herb crusted halibut, indian dry rub yellow fin tuna, citrus marinated shrimp, poached rock shrimp with avocado mousse) or chicken.
