2 pounds sweet Italian sausages, 12 medium potatoes, 6 large green peppers, 3 cloves garlic, salt, pepper, olive oil

Directions:
Directions:
Half fill large frying pan with cold water. Take sausages and puncture with fork all around. Place in frying pan and allow to boil 10 - 15 minutes. This draws all the fat from the sausage.
While sausages are cooking, peel, quarter, and wash- dry potatoes. Wash peppers, remove stems and quarter. In large roasting pan pour a light coating of oil, add garlic cloves. Preheat oven to 350. After sausages have been parboiled, remove from frying pan and place in roasting pan. Add peppers and potatoes. Sprinkle with salt and pepper to taste. (Roll pepper, sausages, and potatoes in pan so all are coated with oil) Place in oven.
Cook for about 40 minutes stirring every 10 minutes to avoid sticking or potatoes breaking.
