1 lb halibut steaks (4-4 oz portions)
herbs and lemon as desired
olive oil
salt and pepper to taste

Directions:
To bake: Arrange steaks in greased baking dish. Drizzle with melted margarine or butter. Sprinkle with salt, pepper, and favorite seasonings. Bake in a preheated 450 degree oven until fish just flakes when tested with a fork (aprx 10 minutes per inch of thickness measured at its thickest part).

To broil or grill: Arrange steaks on greased broiler pan or grill grids. Cook 4 inches from heat until fish just flakes when tested with a fork (appr 10 minutes per inch of thickness measured at its thickest part), turning once and brushing several times during cooking with vegetable oil, margarine, butter or basting sauce.

To poach: Cover fish with hot salted water. Add several onion and lemon slices, a handful or parsley and several peppercorns. Simmer, covered, until fish just flakes when tested with a fork (appr 10 minutes per inch of thickness measured at its thickest part).
