lb. tuna - #2 grade (cut into 3 4 oz pieces)
2 Tbsp flour or cornstarch
1 Tbsp coriander
Dash of nutmeg, cayenne, cinnamon, cumin, salt, pepper
- lemon zest

Directions:
Directions:
Mix dry rub ingredients (everything except the tuna).
Crust one side of tuna pieces with dry rub.
Heat pan to medium high heat.
Add pure olive oil (or 70/30 - canola/evoo mix).
When oil is hot, pan sear crust side down apprx. 1 2 minutes.
Flip and sear for 1 minute then take off heat to rest.
