1 lb boneless skinless chicken breast (cut into 4-4 oz portions)
6 tsp goat cheese
6 tsp basil pesto
Fresh ground pepper to taste

Directions:
Directions:
Butterfly 4 oz chicken portions. Stuff each with 1 tsp of cheese and 1 tsp of pesto. Use a toothpick to hold each portion closed. Top with tsp of pesto and pepper. In a pyrex baking dish, bake in a preheated 375 degree oven for 35 40 minutes.
