2/3 cups pure lard (1 pound), 5 cups flour, 2 tsp salt, 1 egg - slightly beaten, 1 tbsp white vinegar - 1 tbsp cold water

Directions:
Directions:
Combine salt and flour, cut in lard until mixture is like coarse crumbs. In a one cup measure put slightly beaten egg and vinegar. Stir and add cold water to make one cup. Pour into flour mixture and stir with fork until mixture forms into a ball. Work a little bit with your hands until it sticks together nicely. Can be refrigerated or store in freezer until required. Roll and cut to size.

For 3 double crusts for a single crust pie, break off enough to make the crust - let set at room temp until easy to handle. roll out, cut to fit and put the scraps back in with the big ball until required.
