1 lb. ground beef
1 onion, chopped
2 cans corn, undrained
1 can pinto beans, undrained
1 can black beans, drained
1 can Mexi stewed tomatoes
1 can Rotel tomatoes
Tortilla chips, optional
sour cream, optional
1/2 lb. Mexican Velveeta

Directions:
Brown ground beef and onion. Drain. Add remaining ingredients. Simmer 30 minutes or more. Stir occasionally so cheese does not stick to the bottom. Serve with tortilla chips (broken) and/or sour cream.

When I make this I usually put it in my crock pot and add the cheese closer to the time we are ready to eat so I don't have to worry about the cheese sticking. This soup also freezes well.
