1 3/4 c. sugar
1/2 c. lemon juice
2 T. lemon zest
4 egg yolks, beaten until light
1 T. butter
2 c. boiling water
1 baked single 9" pie crust
1 meringue recipe

Directions:
Directions:
In saucepan stir together sugar, yolks, lemon juice/zest, butter and boiling water. Bring to boil and add 3-4 heaping T. cornstarch mixed with water. Cook until clear, pour into baked crust and top with meringue. Bake at 375 degrees for 10 minutes or until golden brown.
