1- 2 bunches of bok choy
2 packages Ramen Noodles(throw out seasoning) broken into pieces
½ c. sesame seeds
4 oz. sliced almonds
4 scallions
½ c. butter
2 tbsp. sugar

DRESSING
½ c. oil (canola)
¼ c. rice vinegar
2 tbsp. soy sauce

Directions:
Directions:
1. Chop bok choy and scallions and chill.
2. Melt butter. Add sugar, sesame seeds, almonds and broken ramen noodles and brown lightly.
3. Put into a bowl and let cool until room temperature.
4. Toss with bok choy, scallions and dressing and serve immediately.

(I have made the dressing and the noodle mixture in advance. Just warm up the noodle mixture in microwave for a minute or two so the butter isn’t congealed before adding it to bok choy.)
