1 package Knorr Spanish Rice Mix
1 pound high quality ground beef
1 Japanese eggplant
1/2 cup (or so) sliced fresh carrots
2 fresh zucchini
1 package baby bella or other fresh mushrooms
2 fresh tomatoes
Olive Oil

Directions:
Directions:
Begin browning the ground beef. After the first time you "turn" the beef, gently stir in the eggplant, zucchini, mushrooms and carrots. Continue to cook and stir until the meat is fully cooked and veggies tender.

Follow the main dish recipe on the rice packet by adding water and the rice mix. Cook as directed until the rice is tender.
