Dressing Ingredients
1 oz (a few cloves) of garlic
tsp ground chipolte
6 oz low sodium soy sauce
3 egg yokes
2 cups peanut oil
4 oz minced fresh ginger
4 oz distilled white vinegar
7 oz granulated sugar
4 oz water
12 oz tahini

Salad Ingredients
1 head Nappa cabbage, shredded
4 scallions, julienned
2 cups sugar snap peas
Blanched rice stick noodles (optional)
Chopped peanuts for garnish
2 carrots, julienned
4 grilled boneless, skinless chicken breasts sliced crosswise
fresh cilantro for garnish

Combine garlic, ginger, chipolte, vinegar, soy sauce, and sugar in blender and blend until smooth. Transfer to a container.
Without cleaning the blender, add egg yolks and water. While blending, slowly add the oil (as though making mayonnaise). Combine the two mixtures and whip in tahini using a hand blender or wire whip.
Pour dressing over tossed salad ingredients. Portion out remaining dressing and either freeze or give to your guests!

Personal Notes:
This is a favorite of ours from Faegre's, a hip MPLS restaurant in the late '80s. We found this decadent recipe on an obscure food website recently and are lovin' life. Not a bad idea to serve altoids after this meal!
