1 1/2 lbs. yellow squash, sliced
1 stick reduced calorie margarine
1 1/2 cups bread crumbs
1 grated carrot
1 medium onion, chopped
1 can reduced fat cream of mushroom soup
1 cup nonfat sour cream
8-oz. reduced fat grated cheddar cheese

Directions:
Directions:
Cook squash. Melt margarine and pour over bread crumbs. Mix well. In large bowl, mix squash, onion, carrots, soup, sour cream, 1 cup of bread crumbs and half the grated cheese. Pour in dish sprayed with non stick cooking spray. Top with remaining cheese & then the remainder of bread crumbs. Bake at 350º for 30 minutes.
