1 c shortening 1 c brown sugar 1 c white sugar 2 eggs 1 tsp vanilla extract 1 tsp baking soda 1/2 tsp salt 1 1/2 c flour 3 c quick oatmeal
1 c raisins or 1 c chocolate chips
Preheat oven to 375º.
Cream shortening and sugars together; add eggs and vanilla. Slowly add dry ingredients. Stir in oatmeal. If desired, add raisins or chocolate chips to dough. Drop by tsp on ungreased cookie sheets for 10-12 min. Allow cookies to cool 5 min before transfer to cooling rack.
