24 Wonton wrappers
Sesame oil
1 cup sliced napa cabbage
1/2 cup shredded carrots
1/2 cup broccoli sprouts
1 green onion and top, thinly sliced


Sesame Dressing:
3 tbsp canola oil
1 tbsp sesame oil
3 tbsp rice wine vinegar
1/4 cup apricot preserves
1 tsp soy sauce
1 tsp minced gingerroot
2-3 tsp peanut butter
Wasabi peas, as garnish

Directions:
Directions:
Lightly brush edges of wonton wrapper with sesame oil. Press wonton, oil side up, into mini-muffin cup to form pastry shell. Repeat with remaining wonton wrappers, pressing into every other cup in muffin tin so that the edges do not touch. Bake at 350º until lightly browned, 6 to 7 minutes. Cool on wire rack. Combine cabbage, snow peas, carrots, broccoli sprouts and green onions in bowl. Pour Sesame Dressing over and toss. Spoon about 1 tbsp of the mixture into each wonton cup. Garnish with 2 or 3 wasabi peas.

Sesame Dressing:
Mix all ingredients until combine. Makes about 1/2 cup.
