1 head of lettuce chopped fine or less
1 can black beans, drained and dried
2 cups white corn (canned or frozen)
2 cups diced jicama
1 ¼ cilantro
2 or more scallions
1 ½ cups grated jack cheese
Toss with Ranch dressing

Toss with Ranch dressing
Add 3 ½ cups, more or less tortilla strips julienne
Add 3 ½ cups bbq chicken. Cut chicken breasts into tiny pieces. Mix with BBQ sauce. Bake a few minutes, drain liquid.
Add to the salad and serve.
