1 baked 8 inch pie shell or graham crust
1/2 cup lemon juice
1 teaspoon lemon extract
2 eggs separated
1 1/2 cup (15 oz) can sweetened condensed milk
1/4 teaspoon cream of tartar
4 tablespoons sugar

Directions:
Directions:
Combine lemon juice and lemon extract. Gradually stir into sweetened condensed milk. Add egg yolks and stir until blended. Pour into chilled crumb crust or cool pastry shell.
Add cream of tartar to egg whites. Beat until almost stiff enough to hold a peak. Add sugar, gradually beating until stiff but not dry. Pile lightly on pie filling. Bake at 325 degrees until lightly browned, about 15 minutes. Cool.
