Apple Mixture:
4 cooking apples, peeled, thinly sliced
1/4 cup butter
1/2 cup brown sugar
1 tsp cinnamon

Batter:
4 eggs
1 cup flour
1 cup milk
3 Tbsp sugar
1/4 cup melted butter

Directions:

Apple Mixture:
Melt butter in a 12 inch skillet (non stick). Add apples to pan and sprinkle with brown sugar and cinnamon. Cook for 10 minutes or until apples are very tender and liquid in pan is evaporated. If skillet is not oven proof transfer to a 9 x 13 pan.
Batter: In blender or with a whisk, blend the eggs with flour, milk, sugar and melted butter. Blend until smooth.
Pour batter over the apple mixture. Bake in 425 degree oven for 25 minutes until browned and puffed. Serve from pan or invert onto a large serving platter. Sprinkle with icing sugar. Serve in wedges.
