Cake:
2 T. instant coffee
1 1/3 c. boiling water
1 c. oatmeal
3/4 c. butter, softened
1 c. sugar
1 c. brown sugar
2 eggs
1 1/2 t. vanilla
2 c. flour
1 1/4 t. baking soda
3 T. cocoa
3/4 t. salt

Frosting:
1 1/2 T. butter
1 c. powdered sugar
dash of salt
1/2 t. vanilla
1 1/2 T. instant coffee


Directions:
Directions:
Combine coffee and water. Pour over oatmeal; stir and cover. Let stand 20 minutes. Beat butter until creamy. Gradually add sugars, beating until fluffy. Beat in eggs one at a time, add vanilla, soda, salt, flour and cocoa. Blend in oatmeal mixture and pour into greased Bundt pan. Bake at 350 degrees for 50-55 minutes.
Frosting: Beat butter until creamy, add sugar, salt vanilla and instant coffee. Drizzle over cake. Serves 12.
