1 10" baked pie crust

1/2 C. Corn Starch
2 C. sugar
1/2 tsp salt
3 C. water
4 egg yolks
4 tbs margarine
3 tsp grated lemon peel
3/4 C. lemon juice

Directions:
Directions:
Mix corn starch with sugar and salt. Add water and boil until quite thick. Whisk egg yolks and add some of the thickened pudding into the eggs and then pour back into the cooked mixture, stirring as you do it. Return to heat and cook for an additional minute or so to cook the eggs. Remove from heat and add margarine, lemon peel and lemon juice. Whisk until smooth and pour into baked pie crust.

Have your favorite meringue recipe made and immediately put on hot filling and place in oven at 350 or so to cook the meringue.
